Elote - Microwave Monday

Tomorrow is Cinco de Mayo, a celebration and anniversary of the Battle of Puebla. In honor of this, I thought I would show you my take on an Elote, in the microwave!

Ingredients:

  • 1 Ear of Corn, in the husk

  • 4 Tablespoons Mayonnaise

  • 2 teaspoons Sour Cream

  • 1 Lime

  • 3 Tablespoons Cotija Cheese + more for topping

  • 1 Shake Chili Powder

  • 1 Sprinkle Tajin

  • 1 Bag of Spicy Chips

Procedure:

  1. Microwave the corn, in the husk, for 4-5 minutes on high.

  2. Let the corn rest for 1 minute.

  3. In a small bowl, mix the mayonnaise, sour cream, cotija cheese, a squeeze of the lemon, and chili powder.

  4. Cut the top and bottom off the corn the take off the husk.

  5. With a brush, rub the mayonnaise mixture on all kernels of the corn.

  6. Crush chips and roll the corn in the chips. Top with a sprinkle of Cotija, Tajin, and a squeeze of lime.
