Cheesy Polenta - Microwave Monday

Yesterday was Mother’s Day. One of my mom’s favorite dishes is cheesy polenta, so I thought I would try to make it in the microwave!

Ingredients:

  • 4 Tablespoons Water

  • 2 Tablespoons Cornmeal

  • 2 Tablespoons Milk

  • 1/2 teaspoon Olive Oil

  • 2 Tablespoons Parmesan Cheese

  • Mix-in of your choice

Procedure:

  1. Mix the cornmeal, olive oil, and water together in a mug. Microwave for 2 minutes on high.

  2. With a small whisk, mix to eliminate all clumps. Add in the milk and cheese and mix again. Microwave for 1 more minute.

  3. Cut your mix-in (I used roughly 1 Tablespoon roasted bell peppers) and mix in.

  4. Enjoy!
