Cheesy Polenta - Microwave Monday
Yesterday was Mother’s Day. One of my mom’s favorite dishes is cheesy polenta, so I thought I would try to make it in the microwave!
Ingredients:
4 Tablespoons Water
2 Tablespoons Cornmeal
2 Tablespoons Milk
1/2 teaspoon Olive Oil
2 Tablespoons Parmesan Cheese
Mix-in of your choice
Procedure:
Mix the cornmeal, olive oil, and water together in a mug. Microwave for 2 minutes on high.
With a small whisk, mix to eliminate all clumps. Add in the milk and cheese and mix again. Microwave for 1 more minute.
Cut your mix-in (I used roughly 1 Tablespoon roasted bell peppers) and mix in.
