Easy Breakfast Burrito - Microwave Monday
Since I’ve been home, I have been making a lot of my own breakfasts. Breakfast burritos became a quick and simple go-to, and they are great for when you are on the run or running late for your next Zoom meeting! Here is how I make my simple microwave breakfast burrito!
Ingredients:
2 Eggs
1 Burrito sized Tortilla
1/4 cup Mexican Blend Cheese (split into equal parts)
1 teaspoon EVOO
2 Tablespoons Soft Chorizo
1/4 Potato
1/4 Bell Pepper
Procedure:
Cut the Bell Pepper and Potato into like-sized cubes.
In a mug, mix the olive oil, potato, and chorizo until combined. Microwave for 1 minute.
Add the bell pepper, cheese, and eggs. Mix with a fork to combine. Microwave for an additional 2 minutes.
Microwave the tortilla for 20 seconds until warm.
Sprinkle the rest of the cheese on the tortilla. Put the egg mixture on top. Roll into a burrito.
Eat immediately or refrigerate for up to 2 days. (Reheat by microwaving for 1 minute, resting 1 minute, then cooking another 30 seconds.)
