Herb Turkey Meatballs, Award Winning

Herb Turkey Meatballs:

These meatballs were created as a challenge for myself. When I started working with PVPUSD on the school lunch revitalization project, I analyzed the USDA regulations and this is what came from it. Of course, I added salt. These are a great canvas for your favorite sauce or grain.

Ingredients:

8 oz         turkey - ground

12 Tbl         parmesan cheese - coarse grated

1         bread - slice

1/2 cup    2% milk

4 Tbl         panko breadcrumbs

1/2 tsp     oregano - dried

1/2 tsp        thyme - dried

4 tsp        fresh basil - chopped

1                     egg 

1/2 tsp        salt (optional)

2 Tbl        olive oil

 

Procedure:

  1. Preheat oven to 350°

  2. Soak bread in milk

  3. Mix together turkey, parmesan cheese, breadcrumbs, oregano, thyme, basil, egg, and salt. Add the soaked bread.

  4. Form into 2 inch balls

  5. Sear in a hot pan with oil.

  6. Bake in the oven until an internal temperature of 165° is reached (about 10 minutes)

 

Serving Suggestions

Serve with a vanilla bean yam purée, cranberry compote, and toasted micro marshmallows

or

Serve over quinoa topped with your favorite marinara sauce and mozzarella cheese
